Jack-o-Lanterns Stuffed Peppers


6 bell peppers
4 sausages
1 large onion
1 cup halfed cherry tomatoes 
1 cup cooked brown rice
2 tablespoons butter (or olive oil)
Salt and pepper to taste

Heat oven to 350 degrees.  Cook 1 cup of brown rice.  Chop onion, cook in butter /oil until start g to brown.  Add cherry tomatoes and cook stirring constantly for 2 minutes.  Remove from heat.  Brown sausage.  Combine rice, onion, tomato and sausage.  Add salt and paper to taste.  Prepare peppers by removing seeds and cutting shapes.  Stuff pepper with mixture and bake for 30 minutes.
